Pfaffenheim, the fairytale town of Alsace.
Here you will find Pierre Frick's winery.
Frick is a living example of a winemaker on his own path.
He pioneered biodynamic farming in the region and then radically reduced sulphur use.
He is the only one in Alsace to use crown grapes.
His tireless experimentation and innovation has paid off, and his uncompromising wines are among the best.
They ferment at completely different times and in different ways depending on the vintage and the growing region, and - since no sulphur is added to either the must or the wine produced - the malolactic fermentation that always occurs in white wines also varies greatly from batch to batch.
If you expect the same thing from a wine every year, don't buy Frick wine.
